Dosa is a fermented crepe or pancake made from rice batter and black lentils.  It is a staple dish in the South of Indiia.  In the South of India Dosa is commonly eaten as breakfast dish.  Dosa can also be found in the North of India  here it is most commonly served either as a lunch or evening dish.

The most traditional types of Dosas are; Masala Dosa, Rawa Dosa and Paper Dosa.

The Masala Dosa is fine and crispy crepe made from a mixture of rice and lentil flour filled with a spicy mixture of potatoes and onions.  This is served with a daal made from lentils and vegetables and a yoghurt and coconut chutney.

Paper Dosa is the same as a Masala Dosa but it is served without the filling and eaten with the daal amd yoghurt.

Rawa Dosa once again similar to the Masala Dosa but made with coarse semolina flour so giving the dosa a different consistency.

Nowadays Dosas are served with many different fillings such as meat, chicken cheese etc......
